I love stuffed green peppers, and I also love philly cheesesteak sandwiches. So when I ran across a recipe that combines them both in one dish on Pinterest, I got movin’. I didn’t really click through for the recipe, cause where’s the fun in that? I decided to improvise – cause that’s just more fun. Right? So here’s what I decided to do.
Ingredients
4 large green peppers, halved
1 medium onion, chopped
1 pound of lean ground beef
16 slices provolone cheese
1 tbsp olive oil
2 tbsp Worcestershire sauce
salt and pepper
Preheat your oven to 325 degrees. Place the halved green peppers in a 13″x9″ baking dish. Line each green pepper half with a slice of provolone cheese.
In a hot skillet, brown the beef. Once the beef is browned, drain the fat and return the beef to the skillet. Add the 2 tbsp of Worcestershire sauce and heat through. Remove from the heat and set aside. Then heat the olive oil over medium heat and saute the chopped onions with salt and pepper to taste.
Once the onions are softened and lightly browned, remove from the heat. Place an equal amount of sauted onions in each green pepper, then divide the beef mixture among the peppers. Finally top with one more slice of cheese.
Bake covered with foil for 30 minutes. Remove the foil and turn the heat to broil. Broil until the cheese on top lightly browns.
Serves 4 or 6.
